This hemp seed dressing is one of those quiet workhorse recipes you'll come back to again and again. Creamy without dairy, balanced without fuss, and made from simple whole ingredients, it's a versatile base that works just as well on salads as it does drizzled over roasted vegetables or grain bowls.

Hemp seeds bring natural richness and plant protein, while lemon, apple cider vinegar, and fresh herbs keep everything bright, fresh, and alive.

Ingredients
 
 

  • 160 g Hemp seeds - shelled
  • 140 ml Water - filtered
  • 10 ml Olive oil
  • 30 ml Lemon - juice
  • 20 ml Apple cider vinegar
  • ½ each Garlic cloves
  • 1 teaspoon Pink salt
  • 5 g Nutritional yeast
  • 10 g Coriander
  • 10 g Parsley

Equipment

  • Weighing scales
  • Blender
  • Spatula
  • Tasting spoon
  • Storage container

Method
 

  1. Assemble all ingredients.
  2. Place all ingredients, except the herbs in a blender.
  3. Blend until creamy and smooth - about 30 seconds.
  4. Add the herbs and blend again until smooth.
  5. Transfer to a container.
  6. Store in a sealed jar in the fridge for up to 3 days.
