These Wolffia Globosa B12 Boosters are probably the world's first healthy snacks to contain this miraculous plant containing bioavailable Vitamin B12. I'm happy to share my secret recipe with you here!

Have you heard of Wolffia globosa?

Wolffia globosa is a species of duckweed that is considered the world's smallest flowering plant. It contains an abundance of nutrition, boasting all the essential amino acids, bioavailable vitamin B12, omega-3 fats, and a host of antioxidants and minerals.

Ingredients for Wolffia globosa B12 boosters

This is a basic energy ball recipe with the addition of dried or freeze-dried Wolffia powder added. I source my Wolffia powder direct from the farm of Flo Wolffia in Thailand.

Ingredients you will need for this recipe:

  • Walnuts
  • Cashews
  • Pumpkin seeds
  • Goji berries
  • Dates
  • Coconut oil
  • Wolffia globosa -dried powder
  • Coconut oil
  • Orange

Equipment you will need

You will not require any specialist equipment to make this recipe. All you need is:

  • Weighing scales or measuring cups.
  • A decent blender or magimix to grind everything together.
  • A mixing bowl.
  • Airtight container to store.

How to make Wolffia globosa B12 boosters

This is a quick recipe to assemble.

  • Gather and measure out all your ingredients.
  • Lightly toast the walnuts, cashew, and pumpkin seeds in a dry frying pan or in the oven - allow to cool.
  • Remove the stone from the dates.
  • Melt and cool the coconut oil.
  • Add the dates, goji, walnuts, cashew, pumpkin seeds, cooled coconut oil, Wolffia powder, and orange zest to a blender.
  • Lightly pulse the mix until everything comes together - allow for some texture, and do not over-blend.
  • Transfer the mix to a large mixing bowl.
  • Roll into 40g balls and roll in desiccated coconut.
  • Put in the refrigerator for at least 1 hour before eating.

Substitutions

Wolffia globosa is still a rare ingredient to source. If unavailable, you can substitute dried spirulina, chlorella, kale, wheatgrass, or matcha powders in place of Wolffia. The nutritional profile will not be the same, but they will still taste good!

If you are avoiding dates, cashews, or walnuts for whatever reason, you can substitute other nuts or dried fruits.

  • Almonds, pecans, and pistachio are other nuts that will work well with this recipe.
  • Raisins, apricots, or cranberries would work well in place of dates.

Recipe variations

Roll the Wolffia B12 Booster balls into whatever size balls you prefer. You can also shape them into bars.

Try rolling them in ground pumpkin seeds as an alternative to desiccated coconut.

How to store

You can store these Wolffia booster balls in the fridge for up to 10 days and in the freezer for up to 3 months.

Store in an airtight container for maximum freshness.

Ingredients
 
 

  • 150 g Cashew
  • 150 g Pumpkin seeds
  • 100 g Walnuts
  • 150 g Dates
  • 50 g Goji berries
  • 20 ml Coconut oil
  • 0.5 each Orange - zest
  • 20 g Wolffia Globosa - dried
To coat the B12 Booster Balls
  • 50 g Coconut desiccated
  • 10 g Wolffia Globosa - dried

Equipment

  • Weighing scales
  • Magimix or blender
  • Mixing bowl
  • Tray

Method
 

For the booster ball mix
  1. Assemble and measure all ingredients.
  2. Lightly toast the cashew, pumpkin seeds, and walnuts - allow to cool.
  3. Melt and cool the coconut oil.
  4. De-stone the dates.
  5. Add all ingredients to the blender and pulse - do not over blend
  6. Roll into 40g balls and roll in desiccated coconut and Wolffia powder.
  7. Put in the refrigerator for at least 1 hour before eating.

Holistic chef's top tip

Make a double batch of these booster balls and keep a stash in the freezer. Take a couple with you when you go out and about. They fill the gap in between meals to keep you from reaching for unhealthy snacks.
