    Spiced Banana & Oat Bread

    Aromatic spices, naturally sweet, incredible tasty, light and fluffy, this spiced banana, walnut and oat bread is the ultimate coffee time treat!

    15 minutes to whip this recipe together, then sit back and let the aromas take over the kitchen.

    To make Spiced Banana & Oat Bread

    • Assemble all ingredients.
    • Grind the walnut and flaxseed to a breadcrumb consistency.
    • Mash banana with a fork, add almond milk, coconut oil, coconut nectar, ground walnuts and flaxseed.. mix well.
    • Sieve all the dry ingredients into the wet ingredients.
    • Mix well, transfer to baking tin.
    • Press sliced banana into the mix and sprinkle with chopped walnuts and a pinch of cinnamon.
    • Bake in a pre-heated over at 180c for 45-55 minutes.
    • Allow to cool for at least 30 minutes before slicing!

    • Mixing bowl

    Ingredients
      

    • 300 g Banana ripe
    • 80 ml Almond milk
    • 80 ml Coconut oil
    • 30 ml Coconut syrup
    • 20 g Flax seeds - golden
    • 60 g Walnuts
    • 50 g Oats
    • 60 g Coconut sugar
    • 150 g White flour - gluten-free
    • 3 teaspoon Baking powder
    • 1 teaspoon Cinnamon powder
    • ½ teaspoon Turmeric powder
    • ½ teaspoon Nutmeg powder
    • 1 teaspoon Pink salt

    Toppings Garnish

    • 100 g Banana
    • 50 g Walnuts
    • ⅕ teaspoon Cinnamon powder
    • 10 g Oats
    Prevent your screen from going dark while cooking

    Method
     

    • Pre-heat oven to 180c
    • Line baking tin with parchment paper.
    • Assemble & weigh out all ingredients.

    DRY MIX

    • Sift the spelt flour, chickpea flour, baking powder and spices together into a mixing bowl.
    • Add the walnuts and flaxseed to the blender and blitz briefly until breadcrumb consistency.
    • Add the oats, ground flax and walnuts to the flours and spices bowl.

    WET MIX

    • Add the peeled bananas to a mixing bowl, mash with a fork.
    • Add the almond milk, coconut sugar and melted coconut oil to the mashed banana and mix until smooth with a whisk.

    TO COMBINE

    • Gently fold the wet mix into the dry mix until nice and smooth and all ingredients are well incorporated.
    • Pour mix into baking tin.
      Add the banana and press down until covered with the mix.
      Sprinkle with oats, chopped walnuts and a pinch of cinnamon.

    TO BAKE

    • Bake the banana bread, uncovered, for 45 to 55 minutes, until lightly golden and firm on top. The top of the loaf should slowly spring back when touched.
    • Place the loaf pan on a cooling rack for 30 minutes. Then, slide a knife around the loaf to loosen it and gently remove it from the pan, placing it directly onto the cooling rack until completely cooled.
    • Slice and serve 🙂
