To make spiced banana bread

  • Assemble all ingredients.
  • Grind the walnut and flaxseed to a breadcrumb consistency.
  • Mash banana with a fork, add almond milk, coconut oil, coconut nectar, ground walnuts, and flaxseed. Mix well.
  • Sieve all the dry ingredients into the wet ingredients.
  • Mix well, transfer to a baking tin.
  • Press sliced banana into the mix and sprinkle with chopped walnuts and a pinch of cinnamon.
  • Bake in a pre-heated oven at 180c °C for 45-55 minutes.
  • Allow to cool for at least 30 minutes before slicing!

Ingredients
 
 

Wet Ingredients
  • 300 g Banana ripe
  • 80 ml Almond milk
  • 80 ml Coconut oil
  • 60 g Coconut sugar
Dry Ingredients
  • 150 g White flour - gluten-free
  • 60 g Walnuts ground in blender
  • 20 g Flax seeds - golden ground in blender
  • 50 g Oats
  • 7 g Baking powder
  • 1 teaspoon Cinnamon powder
  • ½ teaspoon Ginger powder
  • ½ teaspoon Nutmeg powder
  • ½ teaspoon Pink salt
Toppings Garnish Before Baking
  • 100 g Banana slice in half lengthways
  • 50 g Walnuts
  • ½ teaspoon Cinnamon powder
  • 10 g Oats

  • Parchment paper
  • Baking tin
  • Oven

Method
 

Preheat & Prep
  1. Preheat oven to 180°C (fan) / 200°C (conventional).
  2. Line a loaf tin with parchment paper.
  3. Weigh and prep all ingredients before starting.
Prepare the Dry Mix
  1. In a large bowl, sift the flour, baking powder, cinnamon, ginger, nutmeg, and salt.
  2. Blend the flax seeds and walnuts briefly into a coarse meal (breadcrumb texture).
  3. Add the blended mixture and oats to the flour and gently mix.
Prepare the Wet Mix
  1. In another bowl, mash the ripe bananas with a fork or whisk until smooth.
  2. Add almond milk, melted coconut oil and coconut sugar.
  3. Whisk until well combined.
Combine Wet & Dry
  1. Gently fold the wet mixture into the dry using a spatula.
  2. Mix until everything is just combined - don't overmix.
Assemble the Loaf
  1. Pour the batter into the prepared loaf tin.
  2. Press the lengthways sliced banana gently into the top of the batter.
  3. Sprinkle with oats, chopped walnuts, and a pinch of cinnamon.
Bake
  1. Bake for 45-50 minutes until golden and the top springs back when touched.
  2. Check doneness by inserting a skewer - it should come out clean.
Cool & Serve
  1. Let the loaf cool in the tin on a rack for 20 minutes.
  2. Carefully remove from the tin and cool completely.
  3. Slice and enjoy!
