This spelt soda bread has been my retreat companion for the last couple of years at Viluz and The Sanctuary. It's the kind of loaf that comes out of the oven with real character! It's quick, yeast-free, beautifully wholesome, and utterly perfect alongside a nourishing soup. Fresh, warm, and deeply comforting, this is the bread I kept baking because everyone loved it!

Retreat Baking: Spelt Soda Bread

This spelt soda bread became such a staple on retreat at Viluz and The Sanctuary that I could practically make it with my eyes closed. It was the dependable loaf I'd throw together between yoga sessions and juice prep - no fuss, no yeast, just real ingredients doing their thing.

Spelt has this lovely, earthy personality; it bakes into a loaf with backbone, the kind of bread that looks you in the eye and says, "I'm here to nourish you." Fresh from the oven, sliced thick and served with a steaming bowl of soup, it always hit the spot. Simple, rustic, and full of character - exactly the kind of food I want people to feel at home with.

Chefs Tips

This bread is at its best on the day it's baked, still slightly warm with a good smear of something wholesome - nut butter, hummus, or a simple drizzle of olive oil. If you've any leftovers, toast it the next day, and it springs back to life beautifully.

Feel free to fold in seeds, chopped herbs, or even a handful of dried fruit. Don't overmix the batter - treat it gently, and it will reward you with a tender, rustic crumb every time.

Ingredients
 
 

  • 430 g Spelt flour
  • 45 g Oats
  • 3 teaspoons Baking powder
  • ¼ teaspoon Baking soda
  • 1 teaspoon Salt
  • 550 ml Water - filtered
  • 1 tablespoon Molasses
  • 1 tablespoon Honey
  • 2 tablespoons Olive oil
  • 1 tablespoon Oats or spelt flakes
Prevent screen from sleep mode

Equipment

  • Weighing scales
  • Mixing bowl
  • Oven
  • Wooden spoon
  • Whisk
  • Bread tin

Method
 

Prepare:
  1. Assemble all ingredients.
  2. Preheat oven to 175 °C and grease a 9 x 5 inch bread tin with a little oil.
  3. Line the bread tin with greaseproof paper.
Dry Mix:
  1. To a large mixing bowl: sieve the 430 g Spelt flour, 45 g Oats, 3 teaspoons Baking powder, ¼ teaspoon Baking soda, and 1 teaspoon Salt to combine.

Wet Mix:
  1. In another bowl, add the 550 ml Water - filtered, 1 tablespoon Molasses, 1 tablespoon Honey and 2 tablespoons Olive oil.
    Whisk them together well.

Combine:
  1. Pour the wet ingredients into the dry and fold together gently. Mix until you can no longer see any dry flour but treat it gently and don't beat it hard or use an electric mixer. The batter should be a nice cake batter consistency.
Bake:
  1. Spoon the batter into the prepared tin, scatter some more 2 tablespoons Olive oil over the top and bake for about 1 hour 5 minutes until it's risen and golden and starting to come away from the edges of the pan.
  2. A small knife inserted into the middle should come out clean. Cooking times vary depending on your oven and the pan you use so it might need a few minutes more or less.
Rest & Cool:
  1. Lift the loaf out of the pan and place on a cooling rack. Tip it gently to the side to remove the parchment paper and allow to cool.
