This spelt soda bread became such a staple on retreat at Viluz and The Sanctuary that I could practically make it with my eyes closed. It was the dependable loaf I'd throw together between yoga sessions and juice prep - no fuss, no yeast, just real ingredients doing their thing.
Spelt has this lovely, earthy personality; it bakes into a loaf with backbone, the kind of bread that looks you in the eye and says, "I'm here to nourish you." Chefs Tips
This bread is at its best on the day it's baked, still slightly warm with a good smear of something wholesome - nut butter, hummus, or a simple drizzle of olive oil. If you've any leftovers, toast it the next day, and it springs back to life beautifully.
