A Short History of Vanilla

Vanilla traces back to the Totonac people of present-day Mexico, who were the first to cultivate the orchid Vanilla planifolia. The Aztecs adopted it, blending vanilla with cacao, and Spanish explorers later carried it to Europe, where it became an instant fascination.

Because the orchid refused to fruit outside its native ecosystem, vanilla remained rare until 1841, when Edmond Albius, a young boy on Rรฉunion Island, discovered hand-pollination. His method is still used globally today and remains one of the most labour-intensive processes in the spice world.
