Our Vision & Core Values

Tanglewood is built on a clear principle: meaningful food education begins with the land. At its core, food education means growing real food, cooking it properly, and understanding where it comes from. Learning happens through practice, grounded in soil, season, and lived experience rather than abstraction.

Everything we build is guided by three core values.

Nature's Intelligence means working with living systems and respecting soil health, seasonality, biodiversity, and ecological balance.

Human Connection means learning together, cooking together, and sharing knowledge openly within the community.

Holistic Education means integrating farm, kitchen, fire, and wellbeing into one complete, functional system.

What We're Building

Tanglewood Farm & Food Studio is structured around four integrated elements. Each one functions independently, but together they form a complete regenerative food education system.

1. A Working Regenerative Farm

At the centre of Tanglewood is a functioning regenerative farm built on permaculture principles, No-Dig growing, agroforestry, silvopasture, rotational grazing, and closed-loop systems. This is not a demonstration garden. It is a productive landscape designed to grow food, restore soil, and increase biodiversity.

Students and visitors walk the land, harvest ingredients, observe soil health, and understand ecological relationships in real time. They see how compost systems operate, how grazing cycles function, and how agroforestry supports long-term resilience. This is lived practice. Not theory.

2. Tanglewood Food Studio

The Food Studio will be a professional teaching kitchen and content studio, opening in 2028. It will become the permanent headquarters of Holistic Chef Academy International.

Courses will be delivered in small groups with a strong emphasis on professional standards and real-world application. The curriculum focuses on wholefood, seasonal, and health-driven cooking, fermentation, sustainable menu systems, and fire-based techniques.

Alongside plant-forward cuisine, we teach responsible nose-to-tail cookery using locally sourced, grass-fed organic meat and wild game. Students learn full-animal respect, sourcing integrity, and how regenerative livestock systems integrate into sustainable food production.

Training extends well beyond home cooking. We will deliver chef development programmes, sports performance nutrition modules, dietary-specific cooking education, and specialist professional training for private chefs, hospitality teams, ski chalet chefs, and superyacht chefs.

Our established Phuket cookery programmes will relocate to Tanglewood, bringing international culinary experience back to Irish soil.

3. The Outdoor Fire Kitchen

Fire is central to the identity of Tanglewood. The Outdoor Fire Kitchen will include wood-fired ovens, charcoal grills, cast iron cooking, and live flame preparation.

Seasonal farm dinners, fire cooking workshops, and collaborative chef events will take place here throughout the year. Cooking over fire demands attention, instinct, and technical precision. It reconnects people to the elemental foundations of food preparation. Fire is not a feature. It is a discipline and a craft.

4. Woodland Spa

The Woodland Spa expands the Tanglewood ecosystem beyond food and into recovery, resilience, and nervous system regulation. It is designed as a practical extension of our education model, not a luxury add-on.

The space will include a wood-fired sauna, cold plunge facilities, and forest walking trails woven through the land. These elements support contrast therapy, seasonal rhythm, and time outdoors.

Fire & Ice evenings will combine sauna and cold immersion with seasonal wood-fired menus, integrating heat, cold, nourishment, and nature into one experience.

At Tanglewood, food and wellbeing are not separate disciplines. They are designed to work together.

Who We Serve

Tanglewood is built for people who want depth, skill, and real-world understanding. Home cooks come to gain practical, hands-on experience rooted in land and season. Professional chefs join to elevate their craft and deepen their knowledge of regenerative sourcing, fire-based cooking, and sustainable kitchen systems.

Hospitality teams use the programme to modernise menus and operations. Private chefs, ski chalet chefs, and superyacht chefs train here to meet high professional standards within a sustainability framework.

The local community remains central to the mission. Tanglewood strengthens food culture close to home by helping families, growers, and learners develop healthier growing and cooking skills that support long-term wellbeing.

All teaching happens in small groups, with high standards and practical focus - improving how people live, cook, and connect with the land.

A New Model for Food Education

Modern food culture is fragmented. Farming is separated from cooking. Cooking is separated from health. Wellness is separated from land. Education often removes students from the systems that actually produce food. As a result, knowledge becomes abstract. Skills weaken. Connection fades.

Tanglewood brings these elements back together. Here, regenerative farming feeds the kitchen. Fire cooking restores elemental skill. Woodland recovery supports nervous system resilience. Education takes place within a living, functioning landscape.

This is not a concept. It is a working model. By integrating farm, kitchen, fire, and forest, Tanglewood demonstrates how food education can be practical, professional, economically viable, and rooted in place.

The Tanglewood Permaculture System

The Tanglewood Permaculture System is a 20-acre integrated landscape designed to function as one regenerative unit. It combines food production, biodiversity restoration, professional education, and fire-based cooking within a working farm environment.

The 5-acre homestead forms the operational heart of the project. This includes No-Dig market gardens, polytunnels, native orchards, the Outdoor Fire Kitchen, the Woodland Spa, and the Food Studio. These elements sit within walking distance of one another, allowing students to move directly from soil to stove.

Beyond the homestead, 15 acres are being developed into agroforestry and pasture systems. Silvopasture, rotational grazing, meadow restoration, biodiversity corridors, and woodland trails form part of this long-term design. The goal is resilience - ecological, economic, and educational.

Every component supports another. Compost feeds soil. Soil feeds crops. Crops feed the kitchen. Livestock regenerate land. Fire returns to food. Nothing operates alone. The Tanglewood Permaculture System is not a demonstration. It is a working model built to show how regenerative farming, professional cooking, and community wellbeing can operate as one interconnected system.

Tanglewood is built on practical skill, lived experience, and physical craft. Soil is worked by hand. Food is cooked over fire. Learning happens face-to-face within a functioning landscape.

Technology supports the system quietly in the background. Intelligent systems help manage scheduling, learning pathways, operational planning, and global online education. They strengthen efficiency and structure, but they do not replace craft.

The foundation remains human capability.

Timeline

Tanglewood is being built deliberately, season by season.

From 2025 to 2028, the focus remains on permaculture farm development, agroforestry expansion, soil restoration, and system design. This is foundational work. It cannot be rushed.

In Autumn 2026, guided farm tours will begin, including structured forest bathing walks through the developing landscape.

In Autumn 2027, the Woodland Spa becomes operational. Fire & Ice evenings will launch, combining wood-fired sauna, cold immersion, and seasonal fire-based menus.

In Spring 2028, the Tanglewood Food Studio opens for its soft launch phase.

By Autumn 2028, Holistic Chef Academy International will be fully operational from its permanent headquarters.

From 2029 onward, the aim is clear: Tanglewood is designed to become a national centre for regenerative culinary education - built season by season, on real soil.
