200g Chinese cabbage(sliced)
100gRomaine lettuce(washed)
100gTomato - cherry(cut in half )
30gFermented tea leaves
2eachGarlic cloves(crushed)
30gPeanuts (toasted)
30gCrispy fava beans
10gCrispy shallot
½eachLime (juice)
½teaspoon Chili flakes
½teaspoonPink salt

Method
Prepare the lettuce. Cut the cos lettuce into bite-sized pieces and set aside.
Slice the cabbage. Finely slice the Chinese cabbage into thin, crisp strips.
Prepare the garlic. Peel and finely chop the garlic cloves.
Prepare the tomatoes. Halve the cherry tomatoes, or quarter any larger ones.
Add the lettuce. Place the prepared cos lettuce into a large mixing bowl.
Add the tomatoes. Add the halved or quartered cherry tomatoes to the bowl.
Add the garlic and fermented tea leaves. Spoon in the fermented tea leaves and add the chopped garlic.
Add the peanuts. Scatter in the toasted peanuts, reserving a small amount for garnishing.
Add the crispy fava beans. Add the crispy fava beans, reserving a few for the final garnish.
Add the chilli. Sprinkle the chilli flakes evenly over the salad.
Season. Add the salt, adjusting the amount if your fermented tea leaves are already well seasoned.
Add the lime juice. Squeeze the fresh lime juice over the salad.
Add the olive oil. Drizzle the olive oil evenly over the ingredients.
Add the cabbage and mix. Add the finely sliced Chinese cabbage. Using clean hands or salad servers, gently toss everything together until the fermented tea leaves, lime juice and seasoning are evenly distributed. Taste and adjust the seasoning if necessary. Transfer to a serving plate, garnish with the reserved peanuts, crispy fava beans and crispy shallots, and serve immediately.
