Ingredients
20mlCoconut oil
100gWalnuts
100gHazelnuts
150gDates
150gDried figs
½teaspoonCinnamon powder
½teaspoonNutmeg powder
½teaspoonTurmeric powder
¼teaspoonCardamom powder
¼teaspoonPink salt
Method
Assemble all the ingredients.
Add the coconut oil to the frying pan, followed by the whole nuts.
Add the salt, and spices, and roast the nuts slowly for 6-8 minutes until golden brown.
Transfer the nuts to a blender, and pulse gently (keep the nuts coarse texture)
Add the dried fruits to the same frying pan, along with a few splashes of water.
Cook the fruits out gently until they turn soft and mushy.. allow to cool slightly.
Add the pulsed nuts to the fruits mix and mix together until they all come together.
Add the mix to a tray and press down tightly, nicely, and evenly.
Put the tray in the fridge to set it up overnight.
Cut the Anjeer Barfi into 50g bars or whatever size you like and enjoy!
