Best Hummus Recipe

STEP BY STEP TUTORIAL

INGREDIENTS

Cooked Chickpeas - 500g Tahini - 50g Garlic - 2 cloves Cumin - 1 tsp Olive oil -  Lemon - 1

Soak the dried chickpeas overnight.  It's cheaper and healthier to use dried chickpeas!

ADD BAKING SODA

Secret 1 for a smooth hummus is to add a spoon of baking soda when soaking to help break down the chickpea skin.

SOAK OVERNIGHT

Cover and leave chickpeas in the fridge overnight or on the worktop if your kitchen is not too warm.

DOUBLE IN SIZE

The chickpeas will double in size overnight! This recipe calls for 500g of cooked chickpeas, so you will need about 150g of dried chickpeas to start.

ADD FRESH WATER

Strain the chickpeas, rinse well and top up with fresh water to cook.

ADD SALT & COOK

Add salt to the pan of chickpeas and turn on to cook.

COOK FOR 1 HOUR

Cook the chickpeas for approximately 1 hour on a gentle simmer. loosely covered with a lid. Top up with water if they dry out.

STRAIN COOKED CHICKPEAS

Drain the chickpeas when they are fully cooked (or even overcooked) make sure they are soft. KEEP THE LIQUID!

TOAST CUMIN SEED

Meanwhile, toast the cumin seeds in a dry pan for 1 minute on medium heat until fragrant.

GRIND CUMIN

Secret 2 is to freshly grind the cumin seeds to make your hummus sing!

You can use a spice grinder, blender or a 'mortar and pestle' to grind the toasted cumin seeds into a fine aromatic powder.

SLICE GARLIC

Use as much garlic as you like. I add 2-3 cloves of garlic for this recipe.

JUICE LEMON & ADD GARLIC

Secret 3 is to add the garlic and lemon juice together for 10 minutes, it softens the pungency of garlic and gives it a clean, smooth fresher punch.

Secret 4 is to whisk the sesame seed tahini paste with some cold water.

This makes makes the creamiest and smoothest tahini, fundamental for a memorable hummus.

AQUAFABA ICE CUBES

Aquafaba is the name of the cooking liquid from chickpeas. Secret 5 is to freeze some of the chickpea cooking liquid and then blend these ice cubes with the hummus.

BLEND ALL INGREDIENTS

Time to blend.  Add all the ingredients to a high speed blender.

If your hummus is not smooth, add another splash of water and keep on blending until smooth! This is secret number 6!

I like to spatula the blended hummus into a mixing bowl to check the seasoning and consistency.  Taste and adjust.
