Method
Assemble and measure out all ingredients.
30 g Thyme - dried, 20 g Oregano - dried, 20 g Marjoram - dried, 30 g White sesame seeds, 20 g Sumac, 5 g Sea salt
Toast the 30 g White sesame seeds in a dry frying pan over low heat until lightly golden and fragrant. Allow to cool completely.
Combine the 30 g Thyme - dried, 20 g Oregano - dried, 20 g Marjoram - dried, 20 g Sumac, 30 g White sesame seeds, and 5 g Sea salt in a bowl.
For a rustic texture, leave the blend as is. For a finer mix, pulse briefly in a spice grinder - avoid over-blending.
Transfer to an airtight jar and store in a cool, dry cupboard.
