Assemble Ingredients

Weigh out all the ingredients. Wash the okra and tomatoes. Slice the onions and garlic

Chop Ripe Tomatoes

Make sure to choose nice ripe juicy tomatoes.  You can also use tinned chopped tomatoes for this recipe if you cannot find fresh ripe tomatoes.

Slice Okra

Top and tail the okra. You can discard these end pieces. Cut the okra into 1/4 inch rounds.

Let's Get Cooking!

Cooking is the easy and  part! Having all your ingredients laid out and  organised is key to cooking delicious food.

Add Coconut Oil

Traditionally, Ghee is used for cooking in Indian cuisine. This is a clarified butter. I use coconut oil.  You may use a good quality oil.

Add Okra To Frying Pan

Pan fry the okra for about 4 minutes on medium heat. Do not over cook or they will lose their nice green colour.

Add Sea Salt

I like to add a 1/4 tsp of pink salt at this stage.

Transfer Okra To A Bowl

Add the okra to a bowl and set aside to cool while you make the masala sauce.

Toast Cumin Seeds

Add remaining coconut oil to the frying pan.  Toast the cumin seeds in the oil and toast gently on medium heat until fragrant.

Onions & Garlic

Add the chopped onions and garlic. Fry for about 3 minutes until softened.

Chili Spice

In with some sliced red or green chili.  You can also use chili powder here. Be careful how much you add!

Tomatoes

In with the chopped tomatoes and some more salt.  The salt helps break down the tomato and create a nice sauce base.

Add Indian Spices

Time to add the spices.  Add the turmeric, coriander and masala spice powders. Cook out for about 2-3 minutes.

Add Water & Cook Out

Add a few splashes of water to make a nice saucy consistency and cook out gently.

Add Okra

Add the pre-fried okra back into the masala sauce.  Top up with a little more water and cook out gently for another 4-5 minutes.

Chop Fresh Coriander

Chop some fresh coriander (cilantro) to finish the Bhindi Masala with.

Final Seasoning

In with the chopped coriander (cilantro) Check the seasoning.  Add some more salt if necessary.
