Yes, all of the recipes in this book are vegan.
Yes, all of the recipes are plant-based and almost everything is whole food plant-based. You will find a small amount of oil, tamari, tomato puree, and a few condiments used for cooking in some recipes.
Almost every recipe is gluten-free except for a couple of recipes that have pearl barley. I use soy sauce sometimes but that can be replaced by gluten-free tamari and some of the recipes contain oats so just make sure you use GF-certified oats if needed. The Japanese curry has flour in the roux, you may substitute it for a gluten-free flour blend.

Most are very simple and easy to make in 20-40 minutes or less. Some recipes have long ingredient lists but are still made with basic ingredients you most likely already have on hand.
